For me, if my partner insists on continuing I just "switch off" as in my mind is no longer there even if I'm physically present; alternatively, I doze off.This is not new as I have found myself in such conversation multiple times even with someone that is so close to me like my partner. The only thing is when the conversation gets too boring, we can definitely make a u-turn and talk about something else. It's just a way to reignite the talk or we could even ask questions to make it more lively.
It's effective what you said about taking some time apart but that only works for those who are not the clingy type of person in their relationship. Those people can't give their partner any space. It can be choking and depressing sometimes.I find this can happen more than you think it will, one moment you can be talking about something you are both really interested in and then it can turn and one of you may not be as interested as the other about what you are talking about.
